This collection of recipes of citrus is diabetic friendly but you don't have to be diabetic to enjoy it. For anyone watching their sugar intake, these are great recipes. BlackBerry lemonade is a drink very refreshing citrus fruit sweetened with Splenda. The lemon chicken recipe is one of great-grilled chicken and Lime lemon cake is the perfect ending to a meal.
BLACKBERRY LEMONADE
2 cups fresh or unsweetened more frozen, thawed
1 cup fresh lemon juice
1 cup Splenda granular
4 cups cold water
In a blender, combine blackberries, lemon juice and Splenda; process until smooth, stopping to scrape down sides.
Press the mixture mixture through a sieve or colander into a pitcher. Throw away the solids left in the sieve. Stir in water.
Serve over ice cubes.
GRILLED LEMON CHICKEN
2 tablespoons of olive oil or canola
1 lemon
1 clove of garlic, crushed
1 tablespoon chopped fresh parsley
1/4 teaspoon dried Thyme
1/4 TSP dried Marjoram
1/4 teaspoon salt
1/4 teaspoon black pepper
4 (1 1/4 lb) Skinless boneless chicken breasts
Using a potato peeler, remove a few strips of lemon peel. Using a sharp knife, cut into strips of thin strips; reserve. Grate remaining 1 tablespoon Peel make Peel. Squeeze the juice in a bowl.
In a large bowl, combine the lemon zest, olive oil, garlic, parsley, thyme, marjoram, salt and pepper with the lemon juice. Add the chicken breasts and spoon over chicken marinade until well coated. Cover and chill for 30 minutes to overnight.
Heat the grill, griddle or meat over medium heat. Put the chicken on the grill and reserve marinade. Cook the chicken about 10 minutes on each side, until cooked through. Brush the chicken with the marinade for 2 or 3 times during the cooking time. Sprinkle strips of lemon reserved chicken as a garnish.
LEMON CAKE
Personally I don't like Sweet n ' low, however I know many of you do. This is an old favorite singer Rudy Vallee and was made before we had the best tasting, in my opinion, artificial sweeteners. I use granular Splenda. Grilled chicken with lemon is great on a grill for outdoor or indoor. And lemon lime pie is a great way to end any meal!
MERINGUE CRUST:
2 egg whites, beaten egg whites
2 tablespoons powdered milk
1 teaspoon vanilla extract
pinch of salt
Sweet 'N Low packet 2
Add the powdered milk to the egg whites beaten; beat. Add the vanilla mix, salty and sweet n ' low, well. Press the mixture into the pie plate and bake at 300 degrees 20 minutes or until done.
FILLING:
1 cup evaporated skim milk
1 pkg (4-part) lemon-flavoured jelly
lime-flavored Jelly 1 pkg (4-part)
1/8 teaspoon salt
1 1/2 cups boiling water
1/2 cup cold water
Cool Bowl and beaters. Chilled evaporated milk. Jellies are combined with boiling water and salt. Stir until gelatin is completely dissolved. Chill until thickened but not set.
Whip chilled evaporated milk until stiff peaks form and keep. Carefully fold in gelatin mixture. Spoon mixture into crust shell of meringue. Chill 3 or 4 hours before serving.
